Œil de Perdrix
The Champagne Œil de Perdrix by Jean Vesselle is a refined and distinctive expression of Pinot Noir, rooted in the tradition of the Grand Cru village of Bouzy, in the heart of the Montagne de Reims. Its name refers to the delicate pink shade reminiscent of a partridge’s eye, obtained through a brief contact between the must and the grape skins during vinification.
This cuvée is crafted from a meticulous selection of grapes sourced from the estate’s vineyards, with the addition of a small proportion of vin de réserve that enhances depth and complexity. Vinification takes place in stainless steel vats to preserve freshness and precision, followed by a minimum of 36 months of ageing on the lees. The final Brut dosage ensures balance and vibrancy, highlighting the fruit’s elegance.
On the palate, Œil de Perdrix reveals a luminous and bright pink hue, animated by a fine and persistent perlage. The bouquet is elegant, with notes of fresh strawberry, cherry, floral nuances and subtle mineral hints. The taste is fresh, vibrant and harmonious, with a creamy mousse and a long, clean and mineral finish that underlines the distinctive character of Bouzy’s terroir.
