Coteaux Champenois Bérèche & Fils
Aÿ Blanc 2023
The Coteaux Champenois Aÿ Blanc by Bérêche & Fils is a still wine made from Chardonnay grapes coming from the prestigious lieux-dits Brise Pot (lieu-dit) and La Côte Lingard (lieu-dit), in the Grand Cru village of Aÿ, in the Grande Vallée de la Marne. A project that brings out the most authentic identity of this historic terroir, rendering its finesse, tension and depth with artisanal precision and sensitivity in a faithful, essential reading free of artifice.
This edition, from the 2023 harvest, relies on traditional practices with spontaneous fermentation by indigenous yeasts and an ageing of around 18 months in oak barrels of various sizes, one that amplifies complexity and aromatic layering without altering the integrity of the fruit. Bottling by gravity, carried out in March 2025 with the old "à la Chèvre à deux becs" technique, fills the bottles without pumps, preserving precision and expressive delicacy.
On tasting, Aÿ Blanc 2023 reveals itself with great elegance and definition, with a taut, luminous profile in which citrus, delicate white-fruit notes and a saline breath of refined purity and great finesse emerge. On the palate the structure appears slender and vibrant, sustained by an incisive, continuous freshness and a deep mineral backbone that carry through, with rising progression, toward a long, flavourful, sharp finish of rare expressive persistence. Production in a limited run of 1,600 bottles.
