Champagne Aurore & Florian Laval
Ut Prius
The Champagne Ut Prius by Aurore & Florian Laval carries in its name a Latin expression inviting a return to how things once were, to the origins of a way of reading Meunier as a variety capable of elegance and not only of immediacy, and finds its material in the sandy clay soils surrounding Boursault, on the Rive Gauche of the Vallée de la Marne. It is a Blanc de Noirs born of a craft reading of the vineyard, where respect for natural rhythms and the wish never to force varietal expression become the most recognisable signature of this interpretation.
This edition, from the 2021 harvest completed by 23% vin de réserve from 2020, relies entirely on Meunier grapes, with a blend bringing together 70% cuvée and 30% tailles and vinification and fermentation split between 40% in barrique and the remainder in stainless steel. With malolactic fermentation avoided to preserve tension and freshness, after tirage comes sixteen months of ageing on the lees, while dégorgement follows the lunar calendar and the final dosage of 1.12 g/l, in Extra Brut style, uses grape must alone.
On tasting, Ut Prius shows an intense golden dress and a fine, persistent mousse, opening onto a creamy and enveloping nose in which yoghurt, ripe peach and melon weave into hints of honey and candy. On the palate the material proves broad and structured, with well-integrated boisé nuances that widen its depth, while the finish stretches out fresh and saline, supported by a subtle, vibrant tension that confirms its balance.
