Rosé Olim Magnum
The Champagne Rosé Olim by Aurore & Florian Laval takes shape in Boursault, on the Rive Gauche of the Vallée de la Marne, where sandy clay soils and gentle exposures give Meunier the chance to speak with a finesse that overturns every prejudice attached to this variety. The name, which in Latin recalls time gone by, expresses the wish to look back to the family's origins and to sign a Rosé de Meunier built on the memory of the place, on patience and on craft work that always begins in the vineyard.
This edition, from the 2022 harvest, involves a gentle whole-bunch pressing and a static cold settling, with vinification and fermentation split between 40% in barrique and 60% in stainless steel, while one fraction undergoes a brief maceration that defines its colour and aromatic intensity. With malolactic fermentation avoided to preserve freshness and tension, after tirage comes eighteen months of ageing on the lees, and the final dosage of 3.4 g/l, in Extra Brut style, closes on a dry profile.
On tasting, Rosé Olim shows a bright pale pink and a fine, continuous perlage, opening onto an original aromatic range in which orange zest and a vegetal note sit alongside hints of red fruit, plum and a delicate touch of honey. On the palate the texture is enveloping and well articulated, supported by a lively acidity that stretches the flavour development, while a light dusty sensation adds depth and the long, persistent finish confirms balance and personality.
