Champagne Aurore & Florian Laval
La Pature 2020
The Champagne La Pature by Aurore & Florian Laval is a Blanc de Noirs that is part of the project titled "Extrait de Terroir", in this case entirely devoted to Pinot Noir, a variety that here finds a deep interpretation rooted in its terroir of origin. The grapes come from the lieu-dit "Les Noues Nambart" near the village of Boursault, on the Rive Gauche of the Vallée de la Marne, where the clay soils, worked organically, imprint on the wine a marked territorial identity, faithfully conveying the character of a plot with a deep past.
This edition, Vintage 2020, is born from a year marked by a very rainy winter followed by an early spring, a gloomy June and finally drought and intense summer heat, conditions that shaped a concentrated and ripe fruit. The vinification and maturation take place entirely in oak barriques, with a long ageing in wood that enriches its structure, while after tirage comes an ageing on its own lees for around 48 months, at the end of which the final dosage of 1.12 g/l, in an Extra Brut style, accompanies with great measure a Pinot Noir of depth and balance.
On the palate, La Pâture is broad and deep, where the structure of Pinot Noir intertwines with hints of ripe fruit and a texture refined by the passage in wood, in a whole of great coherence. The palate is rich and taut at the same time, sustained by a lively freshness and a very fine bubble that accompany a long and harmonious development, closing on a savoury and persistent finish that confirms the character and territorial identity of this signature cuvée.
