Champagne Pierre Paillard
La Grande RĂ©colte 2012
The Champagne La Grande Récolte 2012 by Pierre Paillard is a refined expression of the prestigious Grand Cru terroir of Bouzy. Produced exclusively from the 2012 harvest, this Millésime blends 55% Pinot Noir from the Lieu-Dit “Les Maillerettes,” where the vines are over fifty years old, with 45% Chardonnay from the Lieu-Dit “Les Mottelettes,” planted more than sixty years ago.
Vinification and maturation for around eight months in oak barrels give the wine depth and structure while preserving its natural energy. After tirage, the wine ages for over ten years on the lees in the Domaine’s cellars, gaining complexity, harmony, and finesse. The minimal dosage of 1 g/l, in Extra Brut style, allows the authentic character of the terroir to express itself with purity, precision, and crystalline elegance.
On the palate, La Grande RĂ©colte 2012 reveals a bright golden hue, animated by an exceptionally fine and persistent stream of bubbles. The bouquet is broad and refined, offering notes of red fruits, blood orange, and wet chalk, which evolve into nuances of brioche, toasted hazelnut, and candied citrus. On the palate, it stands out for its creamy mousse, balanced and layered texture, and a long, mineral finish marked by great precision and class.
