Champagne Pierre Paillard
Taissy "Vieilles Vignes" 2020
The Champagne Taissy "Vieilles Vignes" by Pierre Paillard is an extraordinary expression of pure Meunier, coming from the historic vines of the Lieu-Dit "Les Dessus de Monthouzons", located near the village of Taissy, Premier Cru of the Montagne de Reims. These "old vines", some over 70 years old, grow in rich soils and bring to the wine a unique complexity and depth, thanks to their interaction with the terroir.
This edition, Vintage 2020, was followed by vinification and maturation of 10 months in fût de chêne, followed by a long ageing of over 48 months on the lees, which allowed the Champagne to develop great finesse and aromatic complexity. With a final dosage reduced to only 3 g/l, this Extra Brut expresses the purity and minerality of the terroir.
On tasting, it opens with a lively bouquet, where notes of yellow fruit such as mirabelle plums and golden apples emerge, enriched by hints of peach jam and marmalade. On the palate, the wine appears balanced and juicy, with an elegant and silky texture that reflects both the age of the vines and the meticulous care in vinification. The bold character of this Blanc de Noirs is well balanced between freshness and concentration, resulting in a wine that fully expresses the essence of its terroir and the artisanal skill of the Paillard brothers Antoine and Quentin.
