Champagne Pierre Paillard
Les Parcelles XXI
The Champagne Les Parcelles by Pierre Paillard is a cuvée of marked territorial identity, an authentic expression of the Grand Cru village of Bouzy, on the South-facing slope of the Montagne de Reims. Here the Paillard brothers work the family vineyards with attention to biodiversity and according to sustainable practices, delivering a blend of Pinot Noir and Chardonnay that intertwines the power of the cru with the finesse of the deep limestone, in a constant dialogue between character and minerality.
This edition XXI, based on the 2021 harvest, consists of a blend with a prevalence of Pinot Noir grapes at 80% and Chardonnay at 20%. Vinification and spontaneous fermentation take place in fût de chêne, followed by a maturation of about 10 months on the fine lees. After tirage follows an ageing on the lees of at least 30 months, before dégorgement. The final dosage of 3 g/l, in Extra Brut style, reflects a clear vocation for expressive purity and enhances the transparency of the terroir.
On tasting, Les Parcelles XXI appears elegant and defined, with a very fine perlage that precedes a nose open on white-fleshed fruit, fresh citrus and light chalky nuances. On the palate emerges a saline and vibrant texture, sustained by a clear-cut and well-modulated acidity, which brings drive and drinkability without compromising the structure. The closure is chiselled and precise, with mineral and citrus echoes that extend into a balanced and refined finish of rare expressive coherence.
