Champagne Pierre Paillard
Ambonnay 2020
The Champagne Ambonnay 2020 "Vieilles Vignes" by Pierre Paillard is a Blanc de Noirs born from the finest slopes of the Grand Cru village of Ambonnay, on the South-facing side of the Montagne de Reims, just a few hundred metres from Bouzy. Here the Paillard brothers interpret one of the noblest voices of Pinot Noir in Champagne, working old vines planted between 1966 and 1969 in the lieux-dits Les Aigremonts, La Guillotte and Le Village, where the deep limestone and the South/Southeast exposure transform the power of the vineyards into a rich, deep and elegantly chiselled concentration.
This edition, Vintage 2020, involves vinification and fermentation entirely in barrique, with liège tirage for the prise de mousse and particular attention to the purity of the fruit. After tirage follows an ageing on the lees of over four years, before dégorgement. The final dosage of 2 g/l, in Extra Brut style, accompanies with measure a wine that is already naturally harmonious, letting the voice of the three reference lieux-dits emerge with transparency.
On tasting, Ambonnay 2020 appears intense and refined, with a very fine perlage that precedes a juicy and vibrant mouth, where the depth of the old Pinot Noir dialogues with a chalky tension of rare clarity. On the palate emerges a wide and powerful structure, crossed by notes of crisp red fruits, ripe citrus, a spicy trail and accents of fine pastry, sustained by a sharp acidity that brings drive and energy. The finish is long, vibrant and saline, with a flavoursome persistence that confirms the rare class of the Grand Cru.
