Champagne Paul Bara
L'Audacieuse 2016
The Champagne L'Audacieuse by Paul Bara comes to life from a choice against the grain, because at Bouzy, a Grand Cru village from the Montagne de Reims famed for Pinot Noir, Chardonnay remains a rare and almost experimental presence, on soils that tradition has always intended for something else. It is from this small challenge that the name of the cuvée comes, a Blanc de Blancs that brings together the delicacy of the variety and the depth of a terroir used to expressing volume, substance and remarkable energy.
This edition, Vintage 2016, is made from Chardonnay grapes of the Lieu-Dit Mont des Tours, a carefully sited parcel able to give breadth and salinity at the same time. Vinification and maturation take place in wood, with a measured use of the cask that rounds without covering, while after tirage comes an ageing on the lees of about seven years, and the final dosage of 4 g/l, in an Extra Brut style, completes the picture with remarkable precision.
On tasting, L'Audacieuse 2016 shows a bright golden yellow crossed by a fine, continuous perlage of great delicacy, while the nose moves between lemon, mimosa, honey and a note of bread crust that clearly speaks of the long rest in bottle. On the palate the attack is full and sapid, with a silky texture and hints of cherry and quince, carried by a perfectly integrated acidity that leads to a broad and elegant finish of lasting persistence. Production in a limited run of 3,935 bottles.
