Champagne Paul Bara
Extra Brut
The Champagne Extra Brut by Paul Bara places Bouzy in the foreground, a Grand Cru village from the Montagne de Reims where Pinot Noir brings strength and elegance together in an immediately recognisable profile, and it chooses to render it with as little mediation as possible. It is the cuvée in which the Domaine puts its own idea of purity to the test, entrusting the result to the quality of the raw material and to an incisive writing, where every detail remains exposed and the character of the village comes through unfiltered.
This edition shows a prevalence of Pinot Noir grapes at around 80% completed by Chardonnay, with a share of vin de réserve close to 50% that brings depth and stylistic continuity. Vinification and maturation take place in stainless steel to preserve freshness and energy, after tirage comes an ageing on the lees of about 30 months, while the final dosage of 2 g/l, in an Extra Brut style, heightens its natural finesse.
On tasting, it shows a bright and luminous golden hue crossed by a fine and persistent perlage, while the nose moves between citrus, ripe yellow fruit, toasted hazelnut and delicate floral shades that follow one another with order and great clarity. On the palate it stands out for energy and verticality, with a taut and precise development that unfolds without faltering and leads to a long and mineral finish, marked by a vibrant, sure-footed clarity.
