The Champagne Réserve by Paul Bara carries the savoir-faire of a Domaine inseparably tied to Bouzy, a Grand Cru village from the Montagne de Reims where Pinot Noir finds one of its most complete and celebrated expressions, able to hold power and finesse in a rare balance. It is the cuvée that best conveys the soul of this terroir, the result of a philosophy that favours fidelity to the character of the village and the building of a recognisable style before any search for effect.
This edition, Sans Année, brings together in the blend 80% Pinot Noir and 20% Chardonnay grapes with a significant share of vin de réserve, between 40% and 50%, able to add aromatic richness and depth. Vinification and maturation take place entirely in stainless steel to preserve freshness and energy, while after tirage comes an ageing on the lees of at least 30 months that defines its structure, complexity and harmony in a Brut style.
On tasting, it shows a pale hue crossed by golden reflections and enlivened by fine, abundant bubbles that draw a refined and persistent perlage, while the nose opens on ripe, fleshy fruit led by mirabelle plum and followed by hints of spices, honey, candied fruit, bergamot and orange peel. On the palate it appears fruity and fresh, with a full body of fine power, marked by notes of yellow peach and a discreet touch of black pepper.
