The Champagne Notos by Grethen takes shape in Brouillet, in the very heart of the Vallée de l'Ardre, where the family tends its own vineyards on clay-limestone soils converted to organic and biodynamic farming. The identity of this wine revolves around the full expression of Meunier, a variety often regarded as a supporting player and here instead the absolute protagonist, a sincere and luminous reading of a secluded, authentic terroir that tells of a more intimate Champagne, far from the great names.

This edition brings together in equal parts Meunier grapes sourced half from the 2022 harvest and half from 2023. Vinification and fermentation take place 50% in stainless steel and 50% in fût de chêne with indigenous yeasts for around 24 months, with minimal intervention and without clarification or filtration. After tirage comes a minimum of 36 months of ageing on the lees, while the final dosage of 2 g/l, in an Extra Brut style, leaves full freedom to the expression of the fruit.

On the palate, Notos shows a broad, dynamic profile, where gustatory tension meets an enveloping body shaped by its passage in wood and balanced by the freshness of the steel. The balance plays out between a saline streak and a soft, well-stretched structure, leading to a long, savoury finish of remarkable persistence, in which the herbaceous, deep character of the variety expresses itself with coherence and clarity to the very last instant.
