The Champagne Éole by Grethen is a Blanc de Noirs crafted from an equal blend of Pinot Noir and Meunier, a pure and essential expression of the Vallée de l’Ardre—a still little-explored micro-area with remarkable potential. The grapes come from vineyards farmed with respect for biodiversity, rooted in limestone and loamy soils near the village of Brouillet, which lend the wine a distinctive mineral tension. The cuvée is the result of the blend of three vintages – 2017, 2018, and 2019 – offering a complex and multi-layered reading of the terroir.

Vinification takes place entirely in fût de chêne, followed by 24 months of maturation that impart structure and depth without compromising the wine’s natural freshness. After bottling, the aging continues for another 24 months on the lees, in keeping with a philosophy that sees time as a key ally in developing aromatic complexity. The minimal dosage of 1 g/l(Extra Brut) reflects the Domaine’s artisanal approach, focused on fruit integrity and maximum expressiveness.

On tasting, Éole reveals a pale gold hue and a fine, consistent mousse. The bouquet opens with notes of small red fruits, dried flowers, citrus peel, and subtle smoky hints. On the palate, it is firm and vibrant, with a full-bodied texture, supported by lively acidity and a long, sapid finish. A precise and energetic cuvée that authentically embodies the contemporary vision of Domaine Grethen.

The limited production of only 2,560 bottles further enhances its value and rarity.
