The Champagne De quoi te mêles-tu? by Domaine La Borderie is born in the Côte des Bar, among the luminous hillsides surrounding Neuville-sur-Seine, where Pinot Noir finds one of its most authentic, warm and vibrant expressions. From a single vineyard planted in 1980, this cuvée speaks of respect for the vine and for time, a sincere and passionate interpretation of this terroir, able to bring together solar generosity and mineral tension in a single voice.

This edition, from the 2021 harvest, undergoes a vinification and maturation with roughly 20% in wood and the remaining part in steel tanks, where malolactic fermentation takes place. After the tirage comes an ageing on the lees for a minimum of 30 months, while at dégorgement no final dosage is added, in a Brut Nature style, so as to enhance the purity and precision of the fruit.

In tasting, De quoi te mêles-tu? shows a luminous, dense golden colour, while the nose reveals a subtle and pure profile of smoked chalk, fresh grape, apple and cherry, enriched by almond, liquorice, pink grapefruit, blackcurrant and wild strawberry, through to more heady nuances of honeysuckle, pepper and sweet spices. On the palate the entry is clean and fresh, supported by a creamy, well-integrated effervescence, with fleshy, crisp fruit carrying a balanced, concentrated and crystalline whole of long persistence.

Domaine La Borderie

Domaine La Borderie is a young estate, founded in 2013 by the will of Simon and Marie Normand, a brother and sister who chose to take up the legacy of their family's property. Eleven hectares stretch out around Bar sur Seine, in the Côte des Bar, where the Seine meets the Arce. Their ambition is clear: to craft single-parcel cuvées through meticulous research, playing on the ripeness of the grapes while remaining faithful to the most traditional varieties of this terroir — Pinot Blanc, Chardonnay and Pinot Noir — always with a keen attention to preserving biodiversity and the surrounding landscapes.
