Aux Orgines M. 2019
The Champagne Aux Origines M. by Jean Josselin turns the gaze back to the roots of a family tied to Gyé-sur-Seine, in the southern Côte des Bar, where Pinot Noir finds in the single plot of Comelle Navier (lieu-dit) its deepest and most recognisable expression. The vines, farmed through a sustainable viticulture certified Terra Vitis, grow on clay-limestone soils with a subsoil of Kimmeridgian marl, a matrix that gives this Blanc de Noirs the saline, iodine-tinged notes typical of the area.
This edition, Vintage 2019, takes shape through a parcel-by-parcel vinification carried out entirely in stainless steel and completed by malolactic fermentation, with no fining or filtration so that its expressive integrity is preserved in full. After tirage comes a long ageing on the lees of more than sixty months, while the final dosage of 2 g/l, in Extra Brut style, leaves untouched the richness built by time and accompanies its measure.
On tasting, Aux Origines M. 2019 shows a bright golden yellow and a powerful, expressive nose, where tertiary tones of brioche, butter and honey weave together with biscuit and cooked pear, with accents of cinnamon and liquorice that mark the full maturity it has reached. On the palate it reveals a broad and enveloping texture, supported by an ever-lively freshness that keeps its drive and closed by a deep, saline finish of very long mineral persistence and clean outline.
