Come des Tallants
The Champagne Come des Tallants by Domaine Piollot takes its name from the eponymous Tallants parcel located near the village of Polisot, a hillside with a markedly southern exposure unfolding over calcareous marls from the Upper Jurassic. This is a single-parcel Blanc de Noirs that recounts the nobility of Pinot Noir in the CĂ´te des Bar, where generous sunlight and the chalky matrix of the soil translate into a solar and deep profile, sculpted by a mineral character of rare clarity that defines its signature style.
This edition, from the 2019 harvest, is crafted from Pinot Noir grapes alone, sourced from vines over forty years of age, tended according to the principles of organic viticulture. Vinification and fermentation take place entirely in stainless steel tanks, a choice that preserves the expressive purity of the fruit and the verticality of the terroir. After tirage, the wine rests for at least four years on its lees, with no final dosage, in a Brut Nature style.
On tasting, Come des Tallants reveals a fine and persistent bead that accompanies a gustatory texture of remarkable tension and breadth. On the palate it unfolds with vibrant freshness and dense minerality, sustained by a full and balanced structure that amplifies the depth of the fruit without weighing down the drinkability. The finish is long, savoury and luminous, marked by a saline persistence and chalky echoes that close on a taut elegance of extraordinary clarity.
