Champagne Domaine La Borderie
Cuvée 3 Contrées
The Champagne Cuvée 3 Contrées by Domaine La Borderie takes shape from three vineyards across as many villages of the Côte des Bar, the lieux-dits Val Moré in Bar-sur-Seine, Les Devoix in Merrey-sur-Arce and Clos Bidaut in Ville-sur-Arce, where Kimmeridgian limestone and contrasting exposures shape a mosaic of distinct identity. It is the expression of an artisanal Champagne that weaves the depth of clay-limestone soils together with the brightness of a respectful viticulture, able to preserve the soul of every parcel and restore it with expressive purity.
This edition, from the 2021 harvest and enriched with 15% vin de réserve, shows a clear predominance of Pinot Noir grapes, joined by 20% Pinot Blanc (Cépage Oublié) and 10% Chardonnay. Vinification and fermentation take place in stainless steel tanks, with part of the Pinot Noir aged in fût de chêne, and after tirage comes a maturation on the lees of at least 24 months before dégorgement, with a final dosage of 3 g/l, in an Extra Brut style.
On tasting, Cuvée 3 Contrées reveals an elegant pale gold crossed by amber reflections, with a fine and delicate bouquet that alternates floral notes, sweet spices, candied citrus and dried fruit in a whole of great complexity and aromatic finesse. On the palate the attack is vibrant and savoury, sustained by a taut freshness and a fruity richness that unfold with measured progression toward a broad, deep finish of long persistence, where structure and elegance find a rare balance.
