Rosé Douce Folie 2017
The Champagne Rosé Douce Folie by Domaine La Borderie is an intense and refined Rosé de Saignée that authentically expresses the Pinot Noir from the Côte des Bar. Its soul emerges from a single parcel planted in 1970 in Merrey-sur-Arce, where vines over fifty years old with a south-west exposure give a material of rare complexity and structure, the distinctive trait of this passionate interpretation, in which the artisanal touch enhances every nuance of its terroir of origin.
This edition, Vintage 2017, sees vinification and fermentation begin with a 48-hour whole-cluster maceration in stainless steel, a method that gently extracts colour and aromas while safeguarding the elegance of the fruit. After tirage comes a maturation on the lees of over 48 months before dégorgement, with a final dosage of 4 g/l, in an Extra Brut style.
On tasting, Douce Folie 2017 shows a bright and luminous pink, with a rich and enveloping nose that weaves raspberry, blackcurrant and morello cherry with delicate floral touches of violet and subtle mineral hints. On the palate it is full and fleshy, sustained by a vibrant freshness and a creamy texture that enhance its vinous and gourmand profile, toward a long and precise finish crossed by a fine, persistent minerality that invites rediscovery and another taste. The overall production is around 4,200 bottles.
