The Coteaux Champenois La Justice de Salomon by Denis Salomon is a rare example of a red wine expression from Champagne, signed by Denis Salomon, the exclusive result of pure Meunier from the 2020 harvest. The grapes come from the Lieu-Dit La Justice, located near the village of Verneuil, in the Vallée de la Marne—an area known not only for sparkling wine but also capable of surprising with still wines of profound territorial identity.
The vinification follows an artisanal philosophy: the wine ages for 44 months in fût de chêne, where it develops structure, depth, and a distinctive aromatic complexity, before being bottled without filtration. This long aging period preserves the purity of the fruit and enhances the character of the variety, offering a surprising and refined interpretation of Meunier.
On the palate, La Justice stands out for its elegant profile, dominated by rich and ripe fruit, evoking small red berries, plum, and spicy notes. The texture is silky, the sip dynamic and enveloping, with a harmonious finish that invites contemplation. A Coteaux Champenois of rare finesse, to be discovered with attention and savored over time.
