Champagne Denis Salomon
Demi-Sec Histoire de Famille
The Champagne Histoire de Famille Demi-Sec by Denis Salomon is born from a rigorous selection of Meunier sourced from estate-owned vineyards located near Damery, Vandières and Verneuil, in the heart of the Vallée de la Marne. A Blanc de Meunier cuvée that reflects the identity of the territory and the deep bond between the Vigneron and his roots.
This edition is built on a 75% base vintage 2022, completed by 25% vins de réserve from 2005 to 2021, blended according to the Solera method. Vinification takes place in stainless steel tanks and malolactic fermentation is not induced, a choice that preserves freshness and expressive integrity. After tirage, the wine ages on its lees for 2 years, developing balance and cohesion. At disgorgement, a dosage of 32 g/l is added, placing it firmly in the Demi-Sec category.
On tasting, Histoire de Famille Demi-Sec stands out for its harmonious and delicate profile, with an aromatic range recalling ripe fruit and floral hints. On the palate, sweetness is present yet well calibrated, supported by lively freshness that maintains balance and momentum; the structure is supple without being heavy, leading to a finish of good persistence and an overall impression of coherence and finesse.
