The Champagne Saignée de Meunier “Les Chenevières” by Denis Salomon stems from a deeply identity-driven vision, closely tied to the Lieu-Dit Les Chenevières in Vandières, in the heart of the Vallée de la Marne. The vines, planted in 1962 by Nicolas’ grandfather, are rooted in clay-limestone soils that give the wine a pronounced territorial imprint. Made exclusively from Meunier, this Rosé de Saignée authentically interprets the family legacy while enhancing the varietal’s expressiveness through an intense and coherent reading of its terroir.

This 2022 vintage edition is vinified in stainless steel tanks with spontaneous fermentations, without filtration and without malolactic fermentation, a choice that preserves tension and aromatic definition. After bottling, the wine ages for 24 months on the lees, developing structure and complexity without losing momentum. The final dosage of 5 g/l places it in the Extra Brut category, maintaining balance and stylistic precision.

On the palate, Saignée de Meunier “Les Chenevières” stands out for its intense and well-defined aromatic profile, with notes of ripe red berries, red flowers, and delicate spicy nuances, accompanied by savory hints and a clear mineral imprint. It reveals a firm structure, energetic texture, and vibrant tension that drives the progression toward a persistent, harmonious finish, fully consistent with the identity of the vineyard.

Located in the heart of Vallée de la Marne in Vandières with its 4.8 hectares divided into 22 parcels, among which the most important is Chenovières, where the oldest vines on the property are planted since 60 years old, and where Meunier is cultivated; Domaine Denis Salomon respects the traditions combining modernity with traditional methods. The property's brand was created in 1974 by Denis Salomon, and currently, his son Nicolas, who belongs to the fifth generation of the family, has returned after an experience in Bordeaux to take over the management since 2004.

Vandières village is situated on sunny slopes overlooking the Vallée de la Marne and the vineyards enjoy a privileged southern exposure. The estate benefits from a terroir composed essentially of marl and the vines cultivated are divided by variety into Meunier (70%); Chardonnay (13%); Pinot Noir (16%); and a small part divided into Arbane, Petit Meslier, Pinot Blanc and Pinot Gris.

Nicolas Salomon, winner of the Jeune Talent du Champagne Award, a competition that promotes creative professionals who show important know-how, has been behind major changes in the production approach, such as the decision to move towards integrated viticulture methods. The Domaine currently produces around 34,000 bottles a year and offers a wide range of Champagnes to suit all tastes, always aiming for the highest quality.
