The Champagne Les Prôles Et Chétivins 2012 by Colin is a pure Chardonnay from grapes from the over 60 year old vineyards of the homonymous lieu-dit in Vertus – Premier Cru of the Côte des Blancs, cultivated according to the principles of certified “Haute Valeur” Viticulture Environmental - Niveau 3”.Millésime 2012, the vinification takes place in steel vats and aging on the yeasts for at least 10 years. Dosage 2 g/l (Extra Brut).Champagne Les Prôles Et Chétivins is the most authentic interpretation of the winemaking philosophy of Domaine Colin and its terroir of origin. Its iodized and creamy salinity and its elegant and decisive character are the original expression of the soil characterized by chalk and silex.The nose reveals aromas of fresh bread, hazelnut and tobacco supported by an elegant woody expression; notes of elegant maturity with candied fruit, dried figs, caramel and quinces. A subtle floral touch completes the ensemble. The palate still expresses tension and salinity, revealing notes of mocha and chocolate that recall the fullness perceived on the nose. A gourmet Champagne, ideal for any meal, including chocolate and caramel desserts.
