The Champagne Cœur de Terroir "Le Moint Aimé" by Pascal Doquet is a Blanc de Blancs sourced from the finest parcels of the Mont Aimé, located at the southern edge of the Côte des Blancs. This is a unique terroir, where craie, marine silex, sands, and limestones from an ancient riverbed endow the Chardonnay grapes with a profound and crystalline minerality, a true expression of this extraordinary cru.

This edition, Millésime 2012, delivered fully ripe grapes, capable of combining density and expressive clarity. Fermentation with indigenous yeasts and aging divided between oak barrels (33%) and stainless steel (67%) allowed the wine to preserve aromatic precision and structural depth, without unnecessary embellishment. After bottling, the wine continued aging on its lees for over 10 years, developing complexity and layered character. The final dosage of 2 g/l, Extra Brut, underscores its transparency, allowing the imprint of the vintage and the identity of the site to emerge with clarity.

On the palate, Le Mont Aimé 2012 stands out for its broad and luminous profile, with notes of ripe citrus, white flowers, flint, and delicate toasted nuances. It displays energy and verticality: the texture is fine, supported by a saline freshness that extends the progression. The structure is balanced, deep yet refined, with a long and precise persistence that coherently echoes the chalky matrix of the terroir.
