Champagne Chavost
Blanc de Chardonnay
The Champagne Blanc de Chardonnay by Chavost is made from 100% Chardonnay, grown on 5 hectares of vineyards located in the village of Chavot-Courcourt, in the Vallée de la Marne. The plots, officially converted to organic farming, reflect the Maison’s commitment to a respectful and conscious viticulture. The cuvée is crafted exclusively from the first press juice (tête de cuvée), with the addition of concentrated grape must, a distinctive technical detail of the winemaking process.
Both alcoholic and malolactic fermentations occur spontaneously, thanks to the presence of indigenous yeasts and bacteria, in temperature-controlled stainless steel vats. The Champagne is produced with no added sulfites and without any clarification, in full accordance with a non-interventionist philosophy that aims to enhance the original expression of the fruit.
On the nose, Blanc de Chardonnay opens with creamy notes of yeast, which evolve into aromas of toasted bread, yellow fruit, and a subtle chalky minerality. The palate is round and fresh, with a fluid and light finish that underscores its elegance. The Champagnes in the “sans sulfites ajoutés” range embody a strong personality and are also distinguished by their labels, conceived as a tribute to the founding growers of the Cooperative.
