Champagne Chavost
Paradoxe
The Champagne Paradoxe by Chavost is born as a modern interpretation of the north-facing clay-limestone terroirs, a vision that focuses on tension, expressive purity and a strong territorial identity. Harvests carried out at optimal ripeness and reasoned viticulture give life to a cuvée that combines the freshness of the coolest sites with the depth of traditional grape varieties, enhancing authenticity and transparency.
The blend combines Chardonnay (60%) and Meunier (40%), sourced from the 2019, 2020, 2021, 2022 and 2023 harvests. Vinification is split between barriques and foudres (50%) and temperature-controlled stainless steel (50%), with production entirely without added sulfites, a choice that prioritizes fruit integrity and aromatic precision. The disgorgement is performed without added sugar, in a Brut Nature style that highlights verticality and tension.
During tasting, Paradoxe offers a decisive aromatic profile, with notes of bakery, pastry, ripe pear and a vivid olfactory freshness. On the palate it appears fine and delicate at the attack, then expands into greater structure and richness, supported by light nuances of bitter elegance that lengthen the finish. A precise, energetic and clear Champagne, capable of expressing the stylistic signature of Chavost with personality.
