The Champagne Eurêka! by Chavost is crafted from a blend of 70% Pinot Noir, 15% Chardonnay, and 15% Meunier, sourced from 5 hectares of vineyards located in the village of Chavot-Courcourt, in the heart of the Vallée de la Marne. The parcels, fully converted to organic farming, reflect the Maison’s commitment to a transparent and respectful approach to viticulture. The cuvée is made exclusively from the first pressing (tête de cuvée), with the addition of concentrated grape must, a distinctive element that defines its enological signature.

The vinification takes place in temperature-controlled stainless steel tanks, with spontaneous alcoholic and malolactic fermentations triggered by indigenous yeasts and bacteria. No sulfites are added at any stage, nor is the wine clarified prior to bottling, in line with a natural, non-interventionist philosophy. The absence of final dosage (0 g/l – Brut Nature) confirms the intention to highlight the fruit’s identity and the authentic character of the terroir.

On the nose, Eurêka! reveals the typical nuances of Pinot Noir from Chavot-Courcourt: buttery and milky notes, hints of grey pepper and chalk, intertwined with red berries. On the palate, it displays intense vinosity, supported by both richness and freshness, with a deep and persistent finish that embodies the cuvée’s unmistakable style. The entire “sans sulfites ajoutés” range stands out for its strong personality and stylistic coherence, also conveyed through the labels that pay tribute to the founding growers of the Cooperative.
