Champagne Francis Boulard
Les Vieilles Vignes 2021
The Champagne Les Vieilles Vignes 2021 by Francis Boulard is a Blanc de Blancs made from old Chardonnay vines, mostly cultivated in the “Le Murtet” parcel, located in the Massif de Saint-Thierry. This siliceous-limestone terroir, farmed under certified biodynamic practices, gives the wine a refined and precise character—an authentic reflection of the Domaine’s natural and artisanal approach.
The vinification process is both respectful and meticulous: spontaneous fermentation with indigenous yeasts, ageing on fine lees in small fûts and foudres, with periodic bâtonnage. The wine undergoes malolactic fermentation, is neither fined nor filtered, and rests at least 30 months on the lees before disgorgement, with no dosage (Brut Nature, 0 g/l) to fully highlight the purity of the terroir.
On tasting, Les Vieilles Vignes 2021 appears bright and luminous, with a fine and persistent perlage. The bouquet reveals white flowers, lemon zest, and chalky nuances. On the palate, it is soft and elegant, driven by a fresh acidity and a subtle mineral finish—a faithful expression of the constant pursuit of finesse and freshness that defines the style of Francis Boulard & Fille.
