Champagne Chavost
Blanc de Meunier
The Champagne Blanc de Meunier by Chavost is made from 100% Meunier grapes grown on 5 hectares of vineyards in the village of Chavot-Courcourt, south of Épernay, in the Vallée de la Marne. These plots, officially converted to organic farming, reflect the Maison’s rigorous and conscientious approach. The cuvée is crafted exclusively from the first pressing (tête de cuvée) and stands out for the use of concentrated grape must during vinification, a detail that emphasizes its unique identity.
Alcoholic and malolactic fermentations occur spontaneously, thanks to indigenous yeasts and bacteria, in temperature-controlled stainless steel vats. No sulfites are added at any stage, and no fining is carried out before bottling, in line with a natural, non-interventionist philosophy. The dégorgement is carried out with no dosage (Brut Nature – 0 g/l), underscoring a pure and essential style.
On the nose, the Blanc de Meunier reveals notes of red fruits, pear, and apple, enriched by delicate floral nuances of hawthorn. The palate is vinous and expansive, echoing the aromatic profile, supported by a lively, persistent structure. The label, like all those in the “sans sulfites ajoutés” range, pays tribute to the founding growers of the Cooperative, highlighting the deep bond between terroir, memory, and innovation.
