Champagne Francis Boulard
Les Rachais 2016
The Champagne Les Rachais 2016 by Francis Boulard represents one of the most intimate and meaningful interpretations of Francis Boulard’s philosophy. Made exclusively from 100% Chardonnay, sourced from a single parcel in the Massif de Saint-Thierry, this wine originates from old vines about 50 years of age, rooted in siliceous-limestone soils. The entire process follows the principles of biodynamic farming and the lunar calendar, reflecting a deeply respectful approach to the natural cycle.
Vinification is based on spontaneous fermentation with native yeasts, followed by a long ageing period in French oak barrels, with no fining or filtration. Malolactic fermentation is carried out, and after tirage, the wine matures on its lees for at least 7 years, before being disgorged with no dosage (Brut Nature, 0 g/l). Each phase is guided by the desire to express the identity of the place and the essence of the vintage.
On the palate, Les Rachais 2016 stands out for its aromatic complexity and natural depth. The nose reveals ripe white fruits, citrus notes, fine pastry, toasted hazelnut, and delicate hints of honey. The mouthfeel is broad and enveloping, supported by an elegant structure, well-integrated freshness, and a long finish, faithfully reflecting the nobility of the terroir and the expressive purity of the vintage.
