The Champagne Rosé! by Chavost is the result of a blend of 66% Pinot Noir and 34% Meunier, sourced from five hectares of vineyards located in the village of Chavot-Courcourt, south of Épernay, in the heart of the Vallée de la Marne. The parcels, officially converted to organic farming, reflect the Maison’s conscious vision and deep respect for the land. The cuvée is crafted exclusively from the juice of the first pressing (tête de cuvée), to which concentrated grape must is added—a technical detail that distinguishes the winemaking process.

The entire process takes place in temperature-controlled stainless steel vats, with spontaneous fermentations—both alcoholic and malolactic—triggered by indigenous yeasts and bacteria. In line with the philosophy of no added sulfites, the wine undergoes no fining prior to bottling, thus preserving the fruit’s integrity and original expression. Disgorgement is carried out with no final dosage, resulting in a pure and incisive Brut Nature style.

On the palate impresses with its aromatic concentration, revealing intense notes of blackcurrant, cherries, and stewed raspberries. The mouthfeel is structured, generous, and vibrant, with a texture reminiscent of a red wine, gradually unfolding into a long, fruit-driven finish. The identity of the “sans sulfites ajoutés” range is also expressed through the labels, which pay tribute to the founding winegrowers of the cooperative—guardians of an authentic and pioneering vision.
