Bistrøtage B.17 Affinage Prolongé
Charles Dufour had a first traditionalist approach to viticulture and then almost immediately left room for organic farming. His Champagnes reveal immense authenticity capable of reflecting the character of the terroir of the Côte des Bars. The latest editions of the BISTRØTAGE collection are the result of grapes harvested in the vineyards owned by his mother Françoise and for this reason the label indicates the DOMAINE FRANÇOISE MARTINOT.
The Champagne Bistrøtage B.17 Affinage Prolongé is a Blanc de Noirs composed of 100% Pinot Noir harvested from vineyards on a clayey-calcareous terroir located in the Vallée de l'Arce (Côte des Bar). Harvested in 2017, vinification equally occurred in steel and wooden barrels and extended ageing on its own yeasts for 7 years.
Champagne Blanc de Noirs of intense color and golden fine perlage, the nose is rich, mature, refined and noble.
