The Champagne Les Fourches by Cazé-Thibaut draws its origins from the Rive Droite of the Vallée de la Marne, where a single cru parcel (lieu-dit) stretches across south-facing slopes between Châtillon-sur-Marne and Vandières, resting on clay-sandy soils supported by chalk. It is the expression of an organic viticulture devoted to minimal intervention, safeguarding the legacy of a Chardonnay massale selection begun in 1968 and conveying with rare transparency the luminous, intimate soul of this terroir.

This edition, Vintage 2021, calls for a vinification with slow spontaneous fermentations led by indigenous yeasts in fût de chêne, following an artisanal, non-interventionist approach, without any fining or filtration so as to preserve its integrity. After tirage comes an ageing on the lees for a minimum of 40 months, capable of shaping texture and depth, while the absence of final dosage, in a Brut Nature style, keeps intact the tension and the transparency of the vintage.

On tasting, Les Fourches 2021 reveals itself taut and crystalline, opening with a vibrant attack that weaves together ripe citrus, white fruit and delicate hints of yeast and hazelnut, sustained by a chalky minerality that sharply defines its profile. On the palate it shows a slender, elegant structure, where the luminous acidity and a subtle saline thread guide a refined balance toward a long, vibrant and persistent finish, of rare precision and utmost elegance. Production in a limited run of 904 bottles.
