Les Terres des Buissons 2016
The Champagne Les Terres des Buissons by Bonnaire is a Blanc de Blancs born entirely from Chardonnay grapes grown in the eponymous lieu-dit, a precious vineyard stretching across a deep, chalky terroir near Cramant, a village classified 100% Grand Cru in the celebrated CĂ´te des Blancs. The philosophy behind this label celebrates the absolute purity of the variety and the extraordinary ability of the limestone soil to impart tension, finesse and elegance.
This edition, Vintage 2016, tells the story of a rather late harvest that, thanks also to the marked minerality of its terroir, delivered a crop of outstanding quality and perfect ripeness. Vinification and fermentation take place in fût de chêne, while after tirage comes a long ageing on its own lees for 60 months. The final dosage of 1.5 g/l, in Extra Brut style, keeps the wine's verticality and natural freshness perfectly intact.
On tasting, Les Terres des Buissons 2016 reveals a luminous pale gold colour streaked with bright reflections, foreshadowing an aromatic profile that weaves exotic nuances with delicate hints of hazelnut and vanilla. On the palate it shows a dense, creamy substance, supported by an impeccable balance between structure and gustatory tension, leading to a long, persistent finish of great expressive coherence.
