Champagne Bonnaire
Rosé
The Champagne Rosé by Bonnaire weaves the grace of Chardonnay from the Côte des Blancs with the fruity depth of Pinot Noir from the Montagne de Reims, telling the meeting between the celebrated chalky soil of Cramant and the hills of Bouzy and Bergères-les-Vertus, in a dialogue of finesse and character that gives the wine a personality at once delicate, vibrant and of rare expressive elegance.
This edition shows a predominance of Chardonnay grapes completed by 40% Pinot Noir, with 12% Coteaux Champenois Rouge defining its colour and structure. Vinification and fermentation take place in temperature-controlled stainless-steel tanks, with full malolactic fermentation, while after tirage comes an ageing on the lees for a minimum of 36 months. The final dosage of 6 g/l, in Brut style, seals its harmony.
On tasting, it reveals a coral pink robe animated by a fine, persistent perlage, foreshadowing a bouquet in which red fruits such as cherry and raspberry intertwine with floral and citrus nuances and delicate notes of pastry. On the palate it shows itself ample, fresh and enveloping, supported by a barely perceptible tannic weave, a legacy of the still wines of Champagne, that amplifies its structure, leading to a long, savoury finish of great mineral coherence.
