Symposium
The Champagne Symposium by Aurore & Florian Laval carries in its name the ancient idea of the convivium, that of a wine conceived as an occasion to meet, and finds its material in the parcels surrounding Boursault, on the Rive Gauche of the Vallée de la Marne. It is a Blanc de Noirs that claims the calling of this slope, where sandy clay soils and the river-tempered climate give the black-skinned varieties a gentle ripeness, read by the family with a craft approach that follows the rhythms of nature.
This edition, from the 2022 harvest completed by 22% vin de réserve from the 2020 and 2021 years, brings together 80% Meunier and 20% Pinot Noir grapes, with vinification and fermentation split between 50% in barrique, 40% in stainless steel and 10% in ceramic. After tirage comes sixteen months of ageing on the lees, while dégorgement follows the lunar calendar and the final dosage of 2.2 g/l, in Extra Brut style, uses must from the same harvest.
On tasting, Symposium shows a bright golden dress crossed by coppery reflections, while the nose moves between ripe apple, candied fruit and liquorice and a subtle oxidative, sherry-like nuance that adds depth and an evolved character of rare finesse. On the palate the attack is firm yet balanced, with a lively freshness woven into spicy and mineral hints, a silky texture supported by fine, creamy bubbles and a long, saline, well-structured close.
