The Champagne Yprésien by Legrand-Latour is a Blanc de Noirs shaped by the deep geological history of its territory, inspired by a distant era between 56 and 48 million years ago. The successive sedimentations of fresh and marine waters, which characterise the soils of Vandières and Verneuil, give life to a composite and living matrix made of marls, clay, fine sands and sandstones, the ideal ground in which a wine of intense and vibrant personality matures.

This edition, from the 2021 harvest, shows in the blend a prevalence of Meunier grapes accompanied by 40% Pinot Noir, two varieties that tell the twofold soul of the terroir. Vinification and maturation follow an artisanal approach with twelve months of maturation in fût de chêne without corrective interventions, and after the tirage the wine rests for at least forty-two months on the lees, while the absence of a final dosage, in a Brut Nature style, preserves its authenticity and purest character.

On the palate, Yprésien appears bright yellow in colour with a fine and steady perlage, opening on the nose with a rich, dynamic profile of dried fruit, citrus zest, white spices and hints of blond tobacco interwoven with a saline mineral texture. The palate is dry, structured and taut, with a chalky depth that leads towards a long, incisive and vibrant finish, capable of restoring the ancient and complex voice of its land. The total production amounts to 7,079 bottles.
