Racines de Trois
The Champagne “Racines de Trois” by Waris-Larmandier is an exclusive cuvée that represents the “three roots” of the family: the three brothers, the three grape varieties, and the three macro-regions of the Champagne region. The blend is made up of 60% Chardonnay from the Côte des Blancs, a region famous for its chalky soils that produce high-quality Chardonnay, 30% Pinot Noir from the Montagne de Reims, renowned for its structured Pinot Noirs, and 10% Meunierfrom the Côte des Bar, which adds fruity notes to the blend.
The vinification takes place with spontaneous fermentation using indigenous yeasts, both in stainless steel tanks and in 600-liter oak barrels. After the tirage, the wine ages on its own lees for a period ranging from 24 to 36 months, developing a unique complexity.
On tasting, Racines de Trois presents a brilliant golden color and a fine, persistent perlage. On the nose, the bouquet is complex, with notes of green apple, white flowers, pear, candied orange peel, and lemon, enriched with hints of red fruits, toasted almonds, and fresh bread. On the palate, it is delicate, well-balanced, with a refreshing finish that leaves an impression of purity and finesse.
