Rosé Saignée de la Montagne
The Champagne Saignée de la Montagne by Rémi Georgeton takes its name from an old and rare technique, the saignée, which finds an ideal home in Rilly-la-Montagne among the Premier Cru slopes of the Montagne de Reims. It is a Rosé that refuses every shortcut and chooses direct extraction from the skins, an essential path free of artifice aimed at showing the fruit in its clearest form and at giving a direct, honest reading of the village.
This edition, from the 2021 base harvest, relies exclusively on Pinot Noir grapes macerated in stainless steel tanks for between twelve and eighteen hours, the time needed for colour and aromatic substance to pass into the must without weighing it down, with vinification and fermentation then continuing in steel to preserve the definition of the fruit. After tirage comes an ageing on the lees of at least 24 months, while the final dosage of 3 g/l, in Extra Brut style, refines a deep hue and a recognisable style.
On tasting, Saignée de la Montagne shows a dark, bright red colour crossed by a fine and persistent perlage, while the nose opens on ripe cherry and moves on through small red fruits and a delicate spiced nuance that widens its complexity. On the palate the balance between freshness and structure supports a measured, never intrusive richness, with an orderly progression and a persistent finish closing on a note of composed elegance.
