Champagne Extra Brut

The Champagne V.V.V by Matthieu Godmé-Guillaume is born from a refined blend of Chardonnay and Pinot Noir, sourced from the Grand Cru villages of Verzenay and Verzy, and the Premier Cru of Villers-Marmery, in the Montagne de Reims. The winemaking process follows a highly natural approach, with spontaneous fermentation in carefully selected French oak barrels and ageing for approximately nine months. No fining or filtration is carried out, in order to best preserve the integrity of the raw material and the identity of the terroir.

After the tirage, the wine ages on the lees for at least 15 months before disgorgement. The final dosage, Extra Brut (4 g/l), is designed to enhance the balance between the wine’s natural freshness and its aromatic expression. A rigorous enological journey that aims for purity and complexity, in full respect of tradition and the vigneron’s personal vision.

On the palate, V.V.V reveals itself as elegant and vibrant, with a crisp and luminous aromatic profile. Notes of grapefruit, pear, green apple, and ripe stone fruit intertwine with delicate hints of vanilla and walnuts. The taste is taut, with a crisp minerality that amplifies its depth and a long, precise and dynamic finish.
