Champagne Pierre Baillette
CĹ“ur de Craie "Trois Puits" 2019
The Champagne Cœur de Craie "Trois-Puits" by Pierre Baillette draws its origin from the Lieu-Dit Les Chauds Champs, a parcel set in the surroundings of the Premier Cru village of Trois-Puits, in the northern reaches of the Grande Montagne de Reims, where white chalk lies just a few centimetres below the surface. It is this chalky matrix that gives the cuvée its name and lends tension and finesse to a plot-driven reading that makes the transparency of the site its own stylistic reason.
This edition, Vintage 2019, expresses itself through Pinot Noir grapes giving life to a Blanc de Noirs vinified with spontaneous fermentations and matured for ten months in oak casks of 350 and 500 litres, with no filtration at all and in respect of the wine's natural pace. After tirage comes an ageing on the lees of at least 36 months, through to a dégorgement accompanied by the final dosage of 3 g/l, in Extra Brut style, safeguarding the purity of the fruit and the identity of the terroir.
On tasting, CĹ“ur de Craie "Trois-Puits" 2019 shows a fine and persistent perlage accompanying a profile of ripe red fruits, candied citrus and delicate spiced nuances, in a whole of great expressive clarity. On the palate it appears vibrant and precise, with a remarkable freshness that supports the material without stiffening it and defines its outline, while the balance between structure and drive leads to a long, savoury finish of clear mineral imprint.
