Terre de Sables
The Champagne Terre de Sables by Perseval-Farge originates from Premier Cru vineyards in Chamery, in the Montagne de Reims, and stands out as an identity-driven cuvée, designed to clearly express the vision of the Domaine. The blend of 49% Chardonnay, 34% Pinot Noir, and 17% Meunier creates a balanced and dynamic profile, where precision and restraint combine naturally, offering a clean and contemporary interpretation of the terroir.
This edition is crafted from four vintages: 2017 (31%), 2016 (48%), and 2015-2014 (21%). The vinification and maturation take place mainly in stainless steel, with 16% in oak barrels, while malolactic fermentation is only partial, preserving tension and structure. After bottling, it undergoes lees aging for at least 48 months, contributing to its harmony and complexity. The final dosage of 1.6 g/l, in Extra Brut style, supports balance without weighing down the progression.
On the palate, Terre de Sables reveals a direct and engaging profile. The nose opens with quince, yellow fruits, and honey, followed by hints of gingerbread and hazelnut. The palate is fresh and fluid, with a fine texture and lively bubbles, leading to a harmonious, precise finish with immediate appeal.
