Champagne Perseval-Farge
Cuvée Jean-Baptiste
The Cuvée Jean-Baptiste by Perseval-Farge stands out as one of the Domaine’s most complete and articulate expressions, capable of combining tradition with a contemporary vision. The blend brings together 53% Chardonnay, 34% Pinot Noir, and 8% Meunier, enriched by 5% Cépages Oubliés – Arbanne, Fromenteau, and Petit Meslier – which add further complexity and depth, offering an original and distinctive interpretation of the Chamery terroir.
This edition is composed of 58% from the 2012 vintage, complemented by 42% vin de réserve from the 2013, 2011, and 2010 vintages, creating a rich and layered profile. Vinification and fermentation take place separately in stainless steel and about 40% in oak barrels, with only partial malolactic fermentation, a choice that preserves freshness and tension. After bottling, the wine undergoes at least 8 years of ageing on the lees, essential for developing complexity and structure. The final dosage of 5.5 g/l, in Brut style, supports balance without weighing down the progression.
On the palate, Cuvée Jean-Baptiste reveals a broad and deeply layered profile. The nose opens with notes of ripe fruit, citrus, and white flowers, accompanied by more evolved hints of honey, dried fruit, and light toasty nuances. It is structured and elegant, supported by well-integrated freshness and a precise mineral texture, leading to a long, harmonious, and refined finish.
