C. de Nature (Zéro Dosage)

The Champagne C. de Nature by Perseval-Farge originates from Premier Cru vineyards in Chamery, in the Montagne de Reims, and represents an authentic and rigorous interpretation of the Domaine’s style. The cuvée clearly expresses the character of the terroir, focusing on precision, energy, and a sharp, uncompromising definition.

This edition is obtained from a blend of 23% Pinot Noir, 27% Meunier, and 50% Chardonnay, sourced from multiple vintages, with 2022 (58%) as the base, complemented by 2021 (17%), 2020 (20%), and 2019 (5%). Vinification and fermentation take place partly in stainless steel and about 33% in oak barrels, with only partial malolactic fermentation, a choice that preserves freshness and tension. After bottling, the wine undergoes at least 24 months of ageing on the lees, essential for developing complexity and structure. No final dosage, Zero Dosage, enhances precision, verticality, and full expressive clarity.

On the palate, C. de Nature stands out for its direct and incisive profile. The nose reveals citrus and fresh fruit notes, accompanied by hints of riper fruit, yeast, and toasted hazelnut. It is taut, dynamic, and mineral, supported by lively acidity and a well-defined structure, leading to a dry, precise, and energetic finish.

Perseval-Farge

Perseval-Farge was built in 1808 in Chamery, a Premier Cru village in the heart of the Montagne de Reims. Today, the 4 hectare Domaine is run by the fifth generation - Isabelle and Benoist Perseval - who continue to preserve the important identity and family heritage. Since 1990, 6 different lieux-dits have been used in the vineyard for integrated viticulture, certified "Haute Valeur Environnemental" for its commitment to the use of products and production processes that respect the environment.

The vinification and aging of all or part of the wines takes place in wooden barrels with assemblages of at least 40% of "vin de réserve" and aging time on its yeasts of not less than 5 years for the "sans année" and beyond for all vintage.
