The Champagne Chaillots Gillis 2018 by Nicolas Maillart is a rare Blanc de Blancs made from 100% Chardonnay, sourced from vines planted in 1963 by massal selection in the Lieux-Dits “Chaillots” and “Gillis”, located in the Premier Cru village of Ecueil, in the Montagne de Reims. Here, soils rich in clay and limestone give the grapes a pronounced mineral imprint, enhanced by viticulture that respects natural cycles and combines organic, biodynamic, and, when needed, conventional practices.

Vinification takes place entirely in wood, a choice that helps develop structure and depth without ever masking the purity of the fruit. After bottling, the wine is aged for at least 36 months on the lees, reaching expressive maturity and revealing a masterful balance between tension and complexity. The zero dosage (0 g/l) accentuates its verticality, bringing out intense freshness and vibrant salinity.

On the palate, Chaillots Gillis 2018 stands out for its aromatic precision and the purity of its material. The profile is finely chiselled, with citrus and floral notes interwoven with hints of dried fruit and chalk. A highly limited cuvée, with only 3,633 bottles produced, it authentically embodies the artisanal philosophy of Nicolas Maillart.

The Maillart family has been connected to viticulture since 1753, with documented roots dating back to 1553, when Pierre Maillart worked at the Abbey of Saint-Nicaise in Chamery. Today, Nicolas Maillart represents the ninth generation, continuing a clear vision: to faithfully express the potential of the terroirs of the Montagne de Reims, across Premier and Grand Cru villages. The vineyards, located mid-slope and composed of mature vines, are predominantly planted with Pinot Noir (around 75%), complemented by Chardonnay to bring balance, tension, and finesse.

Since 2009, the Domaine has strengthened its environmental commitment through concrete actions, including the installation of photovoltaic panels covering around 90% of its energy needs. This is supported by HVE (Haute Valeur Environnementale) certification and other recognitions for sustainable viticulture, reflecting a responsible and forward-thinking approach to vineyard management. The goal is to preserve soil balance while ensuring long-term quality and consistency.

In the cellar, the work focuses on respecting the character of the grapes through parcel-by-parcel vinification and a measured use of oak, also applied to the vin de réserve to enhance complexity and depth. A standout feature is a rare own-rooted (pied franc) parcel on sandy soils, planted with ungrafted Pinot Noir: replanted in 1973 using massal selection, it still produces high-quality fruit today. From this vineyard comes a unique Champagne, produced only in the finest vintages, offering a pure expression of the Domaine’s identity and its commitment to terroir-driven wines.
