The Champagne Blanc de Blancs d’Aÿ by Gaston Chiquet is a rare and fascinating interpretation of Chardonnay from the Grand Cru village of Aÿ, historically associated with Pinot Noir. This cuvée comes from vineyards located in a highly prestigious terroir, where Chardonnay takes on an original character, combining finesse, tension and a broader depth compared with the classic expressions of the Côte des Blancs.
Questa edizione, Millésime 2015, è ottenuta da sole uve Chardonnay. La vinificazione e fermentazione avvengono in piccole cuve termoregolate, con fermentazione malolattica svolta, stabilizzazione a freddo e filtrazione, seguite da un breve riposo prima del tiraggio. Dopo il tiraggio segue un affinamento sui lieviti di oltre 7 anni, mentre il dosaggio finale di 6 g/l, in stile Brut, accompagna equilibrio, ampiezza e precisione gustativa.
In degustazione, Blanc de Blancs d’Aÿ 2015 rivela un profilo luminoso e maturo, con note di agrumi canditi, fiori bianchi, miele, frutta gialla, mandorla e lievi sfumature speziate. Al palato mostra volume, energia e una trama sapida ben definita, sostenuta da una freschezza ancora viva e da un finale lungo, elegante e profondamente territoriale.
