Champagne Elise Dechannes
L'alpha & l'oméga
The Champagne L’Alpha & l’Oméga by Elise Dechannes carries in its name the idea of a cycle that never closes, a wine in which beginning and end meet and renew themselves with every new harvest, an authentic expression from Les Riceys, the southernmost village of the Côte des Bar. On these Kimmeridgian soils, rich in limestone and marl dotted with ancient marine fossils, the vigneronne tends just over four hectares with an organic and biodynamic approach, based on manual work, close observation of the vineyard and deep respect for the life of the soil, in the belief that a great Champagne can only come from living land.
This edition, a Blanc de Noirs made exclusively from Pinot Noir grapes, takes shape from a réserve perpétuelle managed using the solera method that brings together the harvests from 2014 to 2021, eight years layered one upon another, weaving together memory, complexity and stylistic continuity. Vinification and fermentation take place spontaneously with indigenous yeasts in temperature-controlled stainless steel tanks. After the tirage comes a period of ageing on the lees of around 30 months, which refines the texture, adds breadth to the aromatic profile and harmoniously integrates the richness of the réserve perpétuelle. No final dosage is added, in the Brut Nature style, a choice that allows the depth of Pinot Noir and the mineral imprint of the terroir to emerge with transparency.
On tasting, L’Alpha & l’Oméga shows a luminous golden hue and a fine, delicate perlage, which accompanies a rich and vibrant nose where notes of ripe yellow fruit, baked apple and small red berries intertwine with hints of dried fruit, pastry, undergrowth and a subtle chalky trace of limestone origin. On the palate the entry is broad and generous, supported by a powerful structure and well-integrated, balanced freshness.
