The Champagne Essentielle by Elise Dechannes is a Blanc de Noirs born entirely from Pinot Noir grapes in the village of Les Riceys, at the southern tip of the Côte des Bar, in the Aube department. On these Kimmeridgian soils, rich in limestone and tiny marine fossils, the vine finds its most authentic expression, while the philosophy of the vigneronne, devoted to organic farming and biodynamic principles, celebrates respect for the fruit and the pursuit of an essential purity, able to translate the character of the terroir with great clarity.

This edition, 2022 harvest, interprets a single generous and sunny vintage through a vinification and fermentation carried out in stainless steel tanks with indigenous yeasts and a minimal use of sulphur, in the name of the utmost naturalness. After tirage, the wine matures on its own lees for at least 24 months, which brings breadth and definition to the aromatic profile. It is finished with no final dosage, in a Brut Nature style, a choice that keeps its mineral tension and vibrant freshness fully intact. The overall production amounts to 8,978 bottles.

On the palate, Essentielle appears with a luminous colour crossed by a fine and persistent perlage, introducing an aromatic profile of fresh fruit, peach and apricot, enriched by delicate citrus nuances and a mineral base. On the palate it proves generous and vibrant, supported by a crystalline acidity and an enveloping structure that reflects the saline vocation of Les Riceys, leading to a dry, deep finish of long persistence.
