The Champagne Rosé Les Protelles by Domaine Piollot comes from the Barséquanais, born from a vision that celebrates the calling of a single lieu-dit for Pinot Noir, the flagship grape of the Côte des Bar. The philosophy embraces certified organic farming, choices that amplify authenticity and expressive balance, restoring the most sincere voice of the terroir. A Rosé cuvée conceived as a faithful portrait of a single vineyard, interpreted with deep respect and an oenological vision capable of carving out an unmistakable identity.

This edition, from the 2019 harvest, comes exclusively from the Les Protelles lieu-dit in the village of Polisot, a vineyard of over 45 years on clay-limestone soils with a south-facing exposure. It is a maceration rosé from 100% Pinot Noir grapes, with a brief three-day stay on the skins followed by vinification and fermentation in tanks and oak barrels with indigenous yeasts. After tirage, the wine rests on the lees for at least four years, and the final dosage of 4 g/l, in Extra Brut style, accompanies the natural freshness of the fruit.

On tasting, Les Protelles reveals a pale pink hue crossed by a fine and continuous perlage, which introduces a palate defined by crisp red fruits, blood orange and subtle notes of brioche. The structure is slender and taut, sustained by a vibrant acidity that dialogues with a silky texture brought by the brief maceration, delivering depth without weighing down. The finish is long, saline and of rare clarity, with a persistence that reflects the authentic character of Pinot Noir from Polisot.
