The Champagne Ultime Zéro by Boizel represents the most essential and pure expression of the Maison’s style, crafted to reveal the transparency of the terroir and the natural harmony of the grapes. It is a Champagne of great precision and intensity, combining energy and finesse, with a dry, luminous, and authentic personality, perfectly balancing maturity, freshness, and aromatic complexity.
The blend consists of 50% Pinot Noir, 40% Chardonnay, and 10% Meunier, sourced from selected Grands and Premiers Crus vineyards. Vinification in stainless steel preserves aromatic brilliance, while the addition of 30% reserve wines brings balance and depth. After bottling, the wine ages for at least five years on the lees, evolving slowly and developing a creamy, harmonious structure without ever losing its natural freshness. The complete absence of dosage (0 g/l) enhances its clarity and mineral tension, resulting in a Brut Nature of extraordinary purity.
On tasting, Ultime ZĂ©ro shows a brilliant golden colour with bright reflections and a fine, lively effervescence. The bouquet is subtle and complex, revealing notes of white peach, vine flowers, and toasted almond, interwoven with citrus and floral nuances that lend verticality and lift. On the palate, it is pure and expansive, with an elegant density supported by vibrant freshness; hints of spiced bread, fruit compote, and a delicate minerality amplify its depth and tension. The finish, long, clean, and harmonious, unfolds with notes of hazelnut and sweet ginger, offering the highest expression of balance, precision, and transparency in line with the timeless philosophy of Maison Boizel.
